I love soup as a meal prep staple mainly because it warms the soul and my hands and it is stackable. Winning. Enter Tomato Risotto Soup. To be honest though you do not have to “treat” this as a soup. It can also be used as a normal tomato flavoured risotto by reducing the liquid to only 2 cups (like you would normally do when cooking risotto).

I was not all that certain on what I should call this creation to for now we are stuck with “Tropical Mussels Melange”. It is a lovely, and perhaps unexpected, mix of bell peppers, mango, sage and mussels. The sage is from my grandmothers garden and every time I visit I bring back sage and rosemary from her garden. I got my salmon from Organic Foods & Cafe which have 20% off on produce every third weekend of the month. This is a brilliant, and cost effective, way to load up on essentials like quinoa, pasta, lentils, flax seed and apparently salmon. They have a really good selection of organic produce, dry goods, meats, baby products and even cosmetics and hygiene products.
