Sometimes you have to start the day with a sinfully delicious chocolate coconut granola. No added sugar (nothing ending in -ose), sweeteners (I am looking at you stevia) or other baddies. Just wholesome ingredients 💕.
Throw in some berries or banana for a lovely and wholesome breakfast. I prefer to use oat milk but you can also continue the coconut theme with coconut milk and a sprinkle of dried coconut flakes on top (and some grated dark chocolate). Adding frozen raspberries will give you a refreshing surprise. However you enjoy it have fun and play around with the ingredients!
Recipe
1 cup dates (approx 20 pieces), pitted
1/2 cup tahini
1/2 cup pumpkin seeds
1 cup coconut flakes
1/4 cup cocoa nibs
3 cups old fashioned oats
2 tbsp cocoa powder, heaped
1 tsp nutmeg
Still in the cup cover the pitted dates with hot water and let sit for 5 minutes (if the dates are dry and not soft do this for longer). Drain half the water and add the dates and date water to a large bowl. Add in tahini and cocoa powder and blitz until it forms a creamy consistency. Add in the dry ingredients and mix with a wooden spoon until combined.
On a parchment lined baking sheet evenly spread out the mix and flatten so it is no more than one centimeter thick. Bake at 150c for 45 minutes or until golden brown. Let cool and then store in a airtight container. Enjoy!
