Cinnamon and pear are such a great combination hence this lovely Cinnamon Pear cake. This recipe is an updated version of a cake you would serve for Kaffee und Kuchen back home. I would pair (pardon the pun) this cake with tea especially if you have green or white teas or a variation on the two. Herbal infusions are also welcome to join the party.

You will also notice that the “base” of this cake is very similar to the chocolate cake I have made before. Recipes like this are easy to adapt. So have some fun with them. Instead of Cinnamon Pear Cake you could make it with apples or use other spices like nutmeg.
Cinnamon Pear Cake Recipe
250 gr margarine or vegan butter < incase you want to know more about vegan butter options
200 gr brown sugar, or white if you prefer
3 large eggs
250 gr white flour
1 tsp baking powder
1 tsp vanilla extract
1 tsp cinnamon
1 pear, thinly chopped
Whip the margarine, vanilla and sugar together until a light mass for about 5 minutes. This greats a fine crumb. Add in one egg at a time and mix to combine. Stir in the flour, cinnamon and baking powder to combine. Stir in the pear pieces and mix to combine. Prepare a loaf tin with a parchment paper and pour in the cake mix. Bake in the middle of the oven at 180c for 50 minutes or until the cake tester comes out clean. Cool for 5 minutes on the wire rack, remove cake from the form and then cool completely.
Hint:
- once the cake is fully cooked slice into 1cm thick pieces and freeze on a wire rack. Once frozen add into a freezer container and voila you have a piece of cake whenever you feel like it. I do this a lot as I live alone. This would also work if you like to batch bake and make snacks or treats for your family
- replace the pear with any berry or fruit of your choice
- decorate your cake with some thinly sliced pear placed on top
- you can omit the vanilla extract or use vanilla sugar instead of it
