Overnight oats are idiot proof, delicious, nutritious and portable. These bad boys are rich in nutrients and, when eaten regularly (preferably without half a cup of sugar), are associated with lower blood cholesterol. Oh yes and they are cheap and easy to store.
I must admit I am almost embarrassed to write the recipe because there is nothing to it. Making creamy overnight oats requires two very simple ingredients. Oats and a milk/milk substitute.
Recipe
1 cup oats
1 cup oat milk
Mix together and store in a covered counter in the fridge overnight.
This will serve one person.
Pimping your oats:
- dried fruit
- nuts
- sliced fresh fruit
- coconut
- linseeds
- chiaseeds
- fresh berries
Have you thought about making them savoury? I wonder how that would taste … maybe like congee? Though for something in the direction of congee I would use rice milk instead of oat milk and add a splash of rice vinegar/soy sauce into the mix. Top with leeks, dry shrimp, bean paste … the possibilities are endless and now my mouth has started watering.
