I have noticed that at work I usually get hungry again at 2 or 3pm and start to crave a snack. Generally I power through it and remind myself that I have eaten lunch but sometimes I cave and buy something. Sometimes that thing is a granola bar. Full of sugar and other nasties or preservatives it is better to make your own. Here is a quick and easy recipe full of oats, nuts, seeds and dried fruit.
Recipe
1 cup old fashioned oats
1/2 cup pumpkin seeds
1 cup almonds
1 cup dried apricots
1/4 cup water
1/4 cup maple syrup
1/2 cup coconut flakes
1 cup dried cranberries
2 tbsp linseed, ground
Spread out the oats, pumpkin seeds and almonds on a parchment lined baking sheet and bake at 180c for 10 minutes.
In a separate bowl add the apricots (I cut them in half), water and maple syrup and blitz until smooth. If the apricots are a bit dry I would let the mixture soak for 10 minutes and then blitz it.
Once the oats, pumpkin seeds and almonds have cooled slightly mix all the ingredients (including the remaining ones) together until a well blended sticky mess forms. Press flat (about 1-1.5cm) high onto a parchment lined baking sheet and bake at 180c for 20 minutes. If you would like them to be a bit crisper bake for 30 minutes at 180c.
Once done let cool completely and then cut into squares. Store in an airtight container in a cool dry place away from sunlight for a week.
