I am a major fan of vegan granola but I find that a lot of recipes or store bought brands contain loads of sugar. This vegan granola recipe is not entirely sweet (okay it is sweet) and innocent but it contains loads of healthy extras like oats, coconut flakes, pecans and pumpkin seeds. If you do not have maple syrup at home you can always replace it with honey or for a vegan option use any other syrup of a similar consistency.
This granola recipe is easy to use and can be a fun project with the kids. No electric kitchen tools (other than the oven) are need when preparing this recipe so go ahead and enjoy!
Recipe
1 cup dried figs (approx 8 pieces), destemmed
1/3 cup tahini
1/3 cup pure maple syrup
2/3 cup pumpkin seeds
1/2 cup coconut flakes
1/2 cup pecans, chopped
3 cups old fashioned oats
2 tbsp ground flax seeds
1 tbsp maple sugar, optional and to sprinkle on top
Still in the cup cover the dried figs with hot water and let sit for 5 minutes (if the figs are dry and not soft do this for longer). Drain half the water and add the figs and fig water to a large bowl. Add in tahini and blitz until it forms a creamy consistency. Add in the dry ingredients and mix with a wooden spoon until combined.
On a parchment lined baking sheet evenly spread out the mix and flatten so it is no more than one centimeter thick. Now is the time to sprinkle the optional maple sugar on top. Bake at 150c for 45 minutes or until golden brown. Let cool and then store in a airtight container. Enjoy!

The oil and sugar free granola recipe is great to use as a base and then you may customise it from there. For example instead of apricots you can use any other dried fruit, use Brazil nuts or walnuts instead of almonds and then mix in some dark chocolate once the granola has been baked and cooled. Put it into a beautiful mason jar, tie a ribbon around it and add a note.

Tahini is super versatile but I think some people shy away from it because they think it is only for hummus.
