Popsicles in September? Welcome to Dubai! When I was in Switzerland a couple weeks ago I was intrigued by a Matcha-Popsicles recipe by FOOBY that I saw in coop. I took the recipe with me and this past weekend I finally made them. To check out the original recipe here is the online version. Their online version actually has some really great recipes and amoungst them there are over 150 vegan recipes. Ohlala. The website it only in German, French and Italian so if a picture tickles your taste buds you will need to use a translator app.
Recipe
250 ml coconut milk
50 g maple syrup
150 ml soy cream or coconut yogurt
1 pinch sea salt
1 tbsp matcha powder
1/2 lime, juiced
Blitz all of the ingredients together until frothy and divide evenly into 6 popsicles molds (I use the IKEA ones as the stems are reusable). Leave to freeze over night.
Decorations? The original recipe calls for a white chocolate dip with a cereal crisp on top but then you cannot store them as easily in the fridge so I did mine without. If you are having guests and want to present it dressed up like that just leave them on a lined tray in the freezer and serve when needed.
