Here we have an AMAZING recipe for oil and sugar free granola. Seriously this is amazing … maybe even life changing. This is an adapted version from what Jenny Mustard had done; for the original click here. This granola has such warm flavours especially from the tahini and dates. Seeing as we have so many date choices in the UAE this would be a fantastic recipe to customise solely based on the dates you like. Enjoy!
Recipe
1 cup Lulu dates (approx 20 pieces), pitted
1/2 cup tahini
2/3 cup pumpkin seeds
1/2 cup coconut flakes
1/2 cup dried apricot, chopped
1/2 cup almonds, chopped
3 cups old fashioned oats
1/2 tsp cinnamon
1/2 tsp nutmeg
Still in the cup cover the pitted dates with hot water and let sit for 5 minutes (if the dates are dry and not soft do this for longer). Drain half the water and add the dates and date water to a large bowl. Add in tahini and blitz until it forms a creamy consistency. Add in the dry ingredients and mix with a wooden spoon until combined.
On a parchment lined baking sheet evenly spread out the mix and flatten so it is no more than one centimeter thick. Bake at 150c for 45 minutes or until golden brown. Let cool and then store in a airtight container. Enjoy!
