Dinner inspiration part 2: now you can see where the baked salmon and quinoa come into play; a healthy, filling and colourful salad. Perfect for the Dubai summer. 1 cup quinoa, cooked
1 carrot, thin chopped
1 cucumber, thin chopped
1/2 yellow pepper, thin chopped
2 tbsp red onion, chopped
200g salmon, baked
1 tsp Dijon mustard
1 tsp lemon juice, fresh squeezed
2 tsp olive oil
Salt and pepper to taste
Mix the quinoa and vegetables together, stir in the dressing and top with 100g of the salmon. Garnish with a lemon wedge and pomegranate seeds. Serves two as a main or four as a starter.
