Keep your treats naughty AND nice with this tropical flavoured vegan pudding. Simple, easy ingredients that don’t break the bank help to dispel the myth that going healthy/vegan is expensive. Eating healthy is good for both the long and short term.
I like how creamy and refreshing this recipe is and to be honest I came up with this by accident. Last week I had made Matche + Lime Popsicles which resulted in leftover coconut milk. I saved the coconut milk in the fridge and the next day thought I could blend it together with some dates for a drink. Little did I know that it would firm up when whipped! What!?!?!?! Yes. Coconut milk firms up when kept in the fridge over night and can be whipped. So with this new knowledge in hand I decided to expand upon on it and came up with this little number.
Recipe
400 ml coconut milk, which was in the fridge overnight (I used Renuka’s full fat version)
2 limes, zested plus juice from one of the limes
6 dates, without the stone, softer is better
It is important to make sure that the full fat coconut milk has been kept in the fridge overnight. If your dates are not soft then place them in a cup with boiling water and let sit for 10 minutes. Drain and, if needed, pat dry.
Mix all the ingredients together (if you want save 2 pinches of the lime zest for decoration) until creamy and smooth.Decorate with a pinch of lime zest and serve immediately.
Serves 2.
Notes:
- mix it up with some lemon instead of lime or other citrus fruit. Obviously the larger the citrus fruit the less zest and juice you will need so try to scale down if making the recipe for two people.
- the dates are used for sweetness and to minimized the coconut flavour. If you are trying to reduce your sugar intake then the dates can be omitted
- need a quick and easy version of whipped cream? The whip just the upper layer of the coconut milk so do not use the entire can. You should not use the clear milk.
- this is a bit obvious but coconut milk and coconut water are not the same. In this recipe you cannot replace coconut milk with coconut water.
