Zoodles. Fun name, great taste. Zucchini noodles, or zoodles for lazy people, are just that. Noodles made from zucchini. They are gluten free, low carb and nutrient rich. Zoodles are also incredible easy to make though many recipes will call for a spiralizer, julienne peeler or mandoline to create them. I do not have any of those devices so I used a normal vegetable peeler to make the thin strips and it worked a treat.
As I am saving up vegetable scraps for making my own stock the first strip, which is all peel, went into my scraps container. Once the first strip was done I just continues making strips down the entire length of the zucchini and rotated it as needed to create as many strips as possible.
Pairing this with a zesty salad dressing, finely chopped apple pieces and some beautiful pomegranate seeds made for a refreshing and substantial salad. You should try it out today!
Zesty Apple Zoodles Salad Recipe
1 medium zucchini, cut into strips using the above mentioned method
1/2 apple, finely chopped
1/3 cup pomegranate seeds
For the dressing:
2 tbsp lemon juice
2 tsp dijon mustard
2 tsp olive oil
1/4 tsp sumac
1/4 tsp dried herbs of your choice
Fresh ground pepper to taste
Mix the dressing ingredients to combine and set aside.
For the salad ingredients place the zoodles on a large sized plate and sprinkle with the apple pieces and pomegranate seeds. Drizzle the dressing on top and serve immediately.
This recipe serves 2.

Hi Mandy. You could also try making sumac roasted chicken by adding sumac into your usual marinade. Delicious. I also like adding it to oil and vinegar based salad sauces and even on top of eggs.

I love zoodles!!! It’s a great way to curb that pasta craving but without any of the wheat! One of my go to meals for sure. I love the addition of pomegranates. Great recipe.
